The Nick Nairn Consultancy began working with Double Tree by Hilton at Dunblane Hydro in 2009, with the aim of improving the hotel’s food service as part of Hilton’s multi-million pound refurbishment.

Nick has a signature restaurant, The Kailyard, at the hotel, and his team are involved at all levels of its food service.

Food and Beverage is the single biggest element of the repositioning of this hotel following extensive refurbishment totalling an investment by the hotel owners of around £12m. Nick’s support in developing both the style and quality of Dunblane Hydro’s offer has also supported double digit growth in accommodation and conference sales.

In 2010 Nick’s involvement at Doubletree Dunblane Hydro supported a 23% increase in Food and Beverage turnover. Our Food income has moved from a position of 20% behind the hotel’s competitive set in 2009 to an overall premium in the market of 4% in 2010.
